A classically trained chef, Neil began his food journey studying culinary arts in Athlone RTC along with a diploma in baking in Kevin Street.
Clearly a chef who loves his trade, his passion for food has taken him all over the world, working across different locations in Europe and Australia. Having also traveled extensively through Africa and South America, he enjoys bringing his international experience to his guests in Dublin.
Head of the brigade at Peploe’s on Stephens Green for over 12 years, he brings vast experience in running a popular and busy dining venue. With stints in Fleet Street Café and The Gresham, he is no stranger to the ever-changing tastes of the Irish palate. With a passion for all things fresh, seasonal, and a little of the unique, he is excited to lead the kitchen team as House re-imagines its culinary offering.
